Old Fashioned Rice Pudding


Ingredients:

  • 1 cup of white rice
  • 2 cups of water
  • 2 cups of milk
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon

Directions:

  1. In a medium saucepan, combine the rice, water, and salt.
  2. Cook over high heat until the water comes to a boil.
  3. Reduce the heat to low and cover the pan with a tight-fitting lid.
  4. Simmer for 18-20 minutes or until the rice is tender and the water has been absorbed.
  5. Add the milk, sugar, vanilla extract, and cinnamon to the rice and stir well to combine.
  6. Bring the mixture to a simmer over medium heat, stirring frequently.
  7. Cook for 20-25 minutes or until the pudding has thickened and the rice is very soft.
  8. Remove from the heat and let cool slightly.
  9. Serve the pudding warm or cold, garnished with additional cinnamon if desired.
