Old Fashioned Rice Pudding
Ingredients:
- 1 cup of white rice
- 2 cups of water
- 2 cups of milk
- 1/2 cup of sugar
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
Directions:
- In a medium saucepan, combine the rice, water, and salt.
- Cook over high heat until the water comes to a boil.
- Reduce the heat to low and cover the pan with a tight-fitting lid.
- Simmer for 18-20 minutes or until the rice is tender and the water has been absorbed.
- Add the milk, sugar, vanilla extract, and cinnamon to the rice and stir well to combine.
- Bring the mixture to a simmer over medium heat, stirring frequently.
- Cook for 20-25 minutes or until the pudding has thickened and the rice is very soft.
- Remove from the heat and let cool slightly.
- Serve the pudding warm or cold, garnished with additional cinnamon if desired.
