Churro Chex Mix
Ingredients:
- 4 cups Rice Chex cereal
- 4 cups Corn Chex cereal
- 1 cup white chocolate chips
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions:
- Preheat oven to 275°F (135°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together Rice Chex and Corn Chex cereals. Set aside.
- In a microwave-safe bowl, melt white chocolate chips and butter in 30-second intervals, stirring in between, until fully melted and smooth.
- Add granulated sugar, brown sugar, and cinnamon to the melted chocolate mixture. Stir until fully combined.
- Pour the chocolate mixture over the cereal mixture and stir until the cereal is evenly coated.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake for 20-25 minutes, stirring every 10 minutes, until the cereal is lightly golden and the chocolate is set.
- Remove from the oven and let cool for 10-15 minutes. Break up any large clumps of cereal.
