MEXICAN STUFFED SHELLS
Ingredients:
- 1 pound ground beef or turkey
- 1 package (12 ounces) jumbo pasta shells
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes and green chilies, drained
- 1 package (1 ounce) taco seasoning mix
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat the oven to 350°F.
- Cook the jumbo pasta shells according to package directions. Drain and set aside.
- In a large skillet, cook the ground beef or turkey over medium-high heat until no longer pink. Drain off any excess fat.
- Add the black beans, corn, diced tomatoes and green chilies, and taco seasoning mix to the skillet. Cook and stir for a few minutes, until everything is well combined and heated through.
- Spread half of the salsa in the bottom of a 9x13 inch baking dish.
- Stuff each pasta shell with a spoonful of the beef and bean mixture, and place the shells in the baking dish.
- Spoon the remaining salsa over the top of the stuffed shells.
- Sprinkle the shredded cheddar cheese over the top of the salsa.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with sour cream and chopped cilantro.
