MEXICAN STUFFED SHELLS

Ingredients:

  • 1 pound ground beef or turkey
  • 1 package (12 ounces) jumbo pasta shells
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes and green chilies, drained
  • 1 package (1 ounce) taco seasoning mix
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat the oven to 350°F.
  2. Cook the jumbo pasta shells according to package directions. Drain and set aside.
  3. In a large skillet, cook the ground beef or turkey over medium-high heat until no longer pink. Drain off any excess fat.
  4. Add the black beans, corn, diced tomatoes and green chilies, and taco seasoning mix to the skillet. Cook and stir for a few minutes, until everything is well combined and heated through.
  5. Spread half of the salsa in the bottom of a 9x13 inch baking dish.
  6. Stuff each pasta shell with a spoonful of the beef and bean mixture, and place the shells in the baking dish.
  7. Spoon the remaining salsa over the top of the stuffed shells.
  8. Sprinkle the shredded cheddar cheese over the top of the salsa.
  9. Cover the baking dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  11. Serve hot, garnished with sour cream and chopped cilantro.
